Grilled Salmon Delight with Easy Caesar Salad
Cook over gas grill or charcoal, approx. 6- 8 minutes total or until opaque with nice grill marks. If preferred, you can use non-stick grilling pan or fish filet holder. When using charcoal grill, place coals around outside of grill with drip pan in center. lay fish filets directly on grill in CENTER and cover to cook.
INGREDIENTS:
1 thick salmon filet per person, thawed not frozen 1 TBsp. butter per person 1 TBsp. "Kahlua", coffee liqueur per person (safe for all as alcohol cooks off) 1/2 tsp. dijon-style mustard
1 head of Romaine lettuce for every 2 people, torn in bite-size pieces 1 TBsp. Cardini-brand Caesar Dressing, per person 1 TBsp. shredded Asiago cheese, per person 1 TBsp. Large Herbed croutons, optional
Melt butter, Kahlua and mustard in small microwave sauce dish. Brush over salmon on one side. Grill about 3-4 minutes, turn and brush second side.
While salmon cooks, place torn lettuce in largest salad bowl. Pour on Caesar dressing and toss well. Add Asiago cheese just before serving and toss again very lightly. Serve croutons in small bowl on the side.
This is "fancy" enough to serve to guests or just to wow the family! And you get the extra bonus of those Omega-3 fatty acids, too. Low carb-low fat and fabulous!
